For My Dad.... Wyoming Quiche

It's a well known fact in my family that my father will ALWAYS make breakfast when the "kids" are spending the night. We all look forward to it, we all know what he's going to make, and when the smell of it wafts up into your room (if you're not awake with an almost three year old already... ahem)... you immediately jump out of bed, hop in the shower, and make your way downstairs. You know when you're at my dad's house, that it's gonna be "Slop Sunday."

Now, this isn't slop. But when Hubby saw it today he said, "Hey, that's like Slop!" And he got all excited. So... this one's for you Daddy. Thank you for all the morning breakfasts at your house.


Wyoming Quiche

Shopping List:
Hot pork sausage
Loaf of French Bread
Green Chilies
Cheddar Cheese (grated or not, your choice... less work if you buy it grated)
Eggs
Milk
Various veggies of your choosing (we had green pepper, onion, and tomatoes in the fridge)


Recipe:

5-6 slices French Bread
1 lb hot pork sausage
2 Tbsp diced green chilies
3 c Cheddar cheese, grated
6 large eggs
2 c milk
salt and pepper to taste
Various veggies, diced (optional)

Place bread in a 9 x 12 backing pan. Brown and drain sausage. Spread sausage, green chilies, and cheese over bread. Combine eggs, milk, spices and stir well. Pour egg mixture over bread mixture. Cover and refrigerate overnight. Bake, uncovered, at 350 degrees for 45 minutes. Serves 6-8


We serve this with fresh cut up fruit and poppyseed bread (recipe tomorrow) for an awesome, healthy breakfast. ALL your food groups in one meal.
